According to most Chinese people, Sichuan cuisine is THE best of whole China. The bitter spicy Sichuan pepper flavor is used in almost every dish and is what makes this cuisine so special. All gradations of spiciness can be found here as well, going from medium spicy to way-too-spicy. Keep in mind that this cuisine is not the most spiciest one of them all!!
Everywhere you go in China, even in the smallest town you can find, there will always be an Sichuan restaurant nearby. The flavor mostly depends on the price rates. Though 'the more expensive, the better' is not always true.

This contemporary eatery is set apart from its more old fashioned neighbours. Don't expect to find any English fare on the menu but the Peking Duck is out of this world and a popular choice with westerners who frequent the restaurant. You can actually watch it being prepared.
The kitchen surrounds the restaurant and is separated by a glass partition so you can observe food preparation. Also available are the more challenging Chinese dishes with comical translations like "pig face in strange flavours".
